Plum cake


Here is a recipe for summer plum cake. A good twist to simple cake with  juicy plums.  The post has been sitting in the draft for a year but its never late to post it right !


Ingredients:

1.5 cups of all purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup salt

1/2 cup unsalted butter (softened)
2/3 cup granulated sugar

2 large eggs at room temperature
3/4 cup sourcream at room temperature
1/2 teaspoon vanilla extract
Grated zest of 1 lemon ~1/2 teaspoon

2 tablespoon dark brown sugar
8-12 small to medium plums (halfed lengthwise and pitted)

- In a stand mixer with paddle attachment, add butter and granulated sugar.  Beat the butter and sugar mixture together on medium for about five minutes.
- Add one egg at a time and beat well while scraping down with spatula for even mixing
-Mix in sour cream, vanilla and lemon zest until well combined
- In a bowl mix together flour, baking soda, baking powder and salt
- Slowly add the flour mixture to egg/butter mixture and mix gently
- In a 9 inch or 8 inch circular baking pan, add parchment paper and apply butter.
- Preheat oven to 350 F
- Spread half of the flour egg mixture (~ 1.5 cups) in the pan
- Sprinkle 1 tablespoon of brown sugar
- Place half of the plum pieces facing down on the flour egg mixture in the pan. You can use all the non-perfect plum pieces here :)
- Spread the remaining half of the flour mixture on top of the plums
- Sprinkle the remaining tablespoon of brown sugar and arrange the remaining half plum pieces with cut side facing up
- Place the pan in the oven for an hour to an hour and 30 minutes. Actual baking time varies based on the juiciness of plums and the pan size. If you are using 9 inch pan, baking time will be closer to an hour. I used 8 inch pan so I ended up baking for one hour and 30 minutes
