Stuffed French Toast




Quiz: What happens when a wife goes out of town to attend a conference and the husband wants to have a quick homemade bite using only the ingredients inside the fridge?



Answer: Wife gets treated with an innovative stuffed french toast when she returns. Fabulous, isn't it and of course she wonders if her "out-of-town" travel frequency should increase? ;)

Serves 2
Ingredients:
4 slices of french sandwich bread
1 large egg or 2 medium eggs, beaten at room temperature
2 tbsp heavy cream
1/4 tsp nutmeg
2 tsp butter

For stuffing:
1 ounce cream cheese (softened)
1 ounce (~ 1 tbsp) raspberry jam or orange marmalade or jam of choice

For topping:
2 tsp butter, whipped
- 1/2 tsp confection sugar

- Mix cream cheese with the jam. Spread half of the mixture on to a slice and cover with another slice to make a sandwich. Repeat to make two sandwiches.
- Combine egg, cream, nutmeg in a bowl and mix well.
- Using a spoon spread half of the egg mixture on both faces and all sides of a sandwich. You can also dip the sandwich in the egg mixture but the first one may soak most of your egg mixture leaving little for the second sandwich and can also make the first one a bit soggy
- Melt 1/2 tsp butter in a nonstick pan and place the sandwich in the pan and toast well. Repeat on the other side of the sandwich using 1/2 tsp butter.
- While toasting the second sandwich, cut the first one in half or leave as is. Put a dollop of about 1 tsp softened butter in the center and sprinkle some confectioners sugar. Serve hot with fresh fruit (preferably the same fruit as used for the jam)
- Enjoy this delicious stuffed french toast. Use fresh (home made) jam for amazing taste

I saw Monks post a photo of one that Priya made around the same time that you guys went there for Holi, that is why I thought you may have been inspired. But it seems like a case of great minds thinking alike :)
