This is one of my favorite salads these days. Full of nutrition, healthy and very easy to put together. Perfect for summer afternoons.
Servers (Lunch for 1 or Appetizer for 2)
Ingredients:
1/4 cup Quinoa (Raw)
1 small orange or medium clementine
1.5 cup milk + 2-3 tablespoon yogurt to make fresh paneer
1/2 cup green peas (Fresh or Frozen)
handful of walnuts
handful of slivered almonds
1-2 tablespoon olive oil
Salt to taste
- In a pan heat about 3-4 cups of water. Once the water starts boiling, add washed quinoa and peas. Let them cook for about 15 minutes or until quinoa is cooked
- In another pan add milk and yogurt on medium heat. Mix with a spoon. Paneer will separate in about 8-10 minutes
- In a serving bowl, peel an orange and cut it into half pieces. Add walnuts and almonds or any other nuts of choice like cashews or pistachios
- Add olive oil and mix slightly
- Separate Paneer from water in a small strainer and squeeze out all the water. Add paneer to the serving bowl. Break paneer into smaller pieces with spoon and mix gently
- Use the same strainer to separate cooked qunioa and peas from water and add them to the serving bowl.
- Sprinkle with good sea salt to taste and mix gently. You can also squeeze juice from one or two slices of orange for a olive oil-orange dressing :) Njoy!
