Mexican Wedding Cookies
About a month ago, I made the mexican wedding cookies for the first time with some changes to this recipe. Since then I have made them thrice:) DO NOT eat more than a cookie at a time - these are calorie devils!
Ingredients:
1 cup butter (Kept at room temperature for 3-4 hrs or microwave for 10-15 seconds)
1/2 cup white sugar
2 tsp water
2 tsp vanilla extract
2 cup all purpose flour
3/4 cup chopped pecans
- Cream butter and sugar together. Add water and vanilla extract and mix gently
- Add flour and chopped pecans and mix properly
- Refrigerate the dough for one and half hour
- Preheat oven to 325 F
- Make small balls of the dough with hands, flatten them and put them on a cookie sheet. Keep the cookies about 2 inches apart. You can make about 3 dozens small cookies from the dough
- Place the cookie sheet in oven and bake for 15-20 minutes
- Take them out of the oven and let them cool.
- Enjoy!
