Eggless Prune Cake



To diversify my baking portfolio, I wanted to learn how to bake an eggless cake :) I read about the "cake fever" which was spread by the eggless date cake in aayi's recipe. I looked into my refrigerator and found prunes instead of dates, so decided to try eggless prune cake with little modifications. Overall, it is an easy, tasty, and refreshing cake which I make quite frequently especially because of the 15 min preparation time.



Ingredients:
22 dried prunes (pitted)
1 cup milk
3/4 cup brown sugar
1/3 cup oil
1 tsp baking soda
1 cup all purpose flour (Maida)
3 tbsp chopped walnuts
2 tbsp sliced toasted almonds

- In a processor, add prune, milk, and brown sugar. Grind to make a smooth paste
- Add baking soda, oil and walnuts to the processor. Pulse twice in the processor
- Sift flour in a bowl. Add the above paste to the flour and mix everything
- Grease a 8X8 pan and add the above mixture to the pan
- Decorate top with slices of toasted almonds
- Bake for 35-40 min at 350 F until done
- Spread the cake fever!

Bahut heavy nahin hota yeh Anjana? I am imagining so many dates/prunes going into it and it is making it sound heavy

Its consistency is in between cake and brownie's - it is more like a loaf. I like the flavors of dates/prunes:)

Main soch rahi hoon ke half quantity mein try karoongi.. then I will know if I get the cake fever or not :)

Okie, let me know if you like it:) viase, u can use less dates/prunes - Aayi's recipe only uses 18 dates.
